There is something about warm weather that inspires me to cook. This is ridiculously stupid considering the need for air conditioning, but I have never tried to suggest I make sense. So a few days ago, I made a little bit of macaroni and cheese. I have no idea what happened. I managed to fill both my enormous casserole dish and an 8x8 pan. 'Cause it ain't mac 'n' cheese until you cover it with breadcrumbs and bake the bitch. (That's a ton of broccoli, bacon and jalapenos mixed into that macaroni and cheese, by the way.) Grating all of that damn cheese sort of made my wrist freak out, which is why I'm currently typing and not beading. Dammit, wrist, you suck.

Anyway, today I experimented with more (extra firm) tofu. Don't get me wrong, I like chicken. But chicken vs. tofu which requires no trimming, excessive hand washing, and is $3 a package even for the "complete" type with all of the added nutrition and still no fat? Yeah, I know what I'd prefer, thanks. I was determined to try and make tofu fajita "meat". I'd say I was actually pretty successful. (There's no "action shot"... because I very happily ate it. *cough*) No, it didn't taste "just like chicken", but then I didn't mind that. The strength of the other ingredients worked with the flavor as well. I'd read/heard somewhere that freezing and then thawing tofu before using it would make the texture more "meat-like", and it did seem notably different from the last time I played with it. I also baked it before adding it into the onions and peppers. It actually managed to get a pretty decent chicken-like texture that way. The real test will come when I reheat it for another meal, because everyone knows fajita filling tastes a million times better after its been stewing a while. And if you didn't, now you do. I assume eventually I will actually have a method rather than "let's try this!" randomness. Maybe.

I was reminded of that because, in case you didn't know, S-E finally made DMC3 Dante and Vergil. *sigh* I guess that's the new Play Arts Kai price point. That's... a real shame. Then again, they look luscious. They'd better be built a hell of a lot better than the DMC4 boys. ...Not that I'm complaining about the sheer humor associated with certain things. [Standard "when are they releasing the bastard?" H-01 rant here.]

Clearly I haven't really gotten back into the swing of interesting link collection... but considering what's just around the corner (SDCC), I'm sure I'll be regretting being online in the first place very soon. I know, I say it like it's a bad thing.
